I love this salad—or should I call it slaw? Yesterday, we were celebrating my dad’s name day (a big day in Romania), and he prepared an assortment of grilled meats. But in true Romanian style, the only vegetables on the table were sauerkraut and pickles. While delicious, I always need my fiber (and more diversity).

Luckily, I had a few celery roots on hand for a new recipe I’m developing for the website, so I decided to use one of them and make this quick and flavorful salad. It’s not only a nourishing salad, but it’s so simple to make, requiring just four main ingredients—carrots, celeriac (or celery root), an apple, and mayonnaise.

When I need only a small amount of mayo, I make it fresh with one raw egg yolk, a bit of Dijon mustard, and extra virgin olive oil. It takes just five minutes. But if you prefer, you can make a larger batch using a blender or even opt for a high-quality, store-bought avocado mayo.

Everyone loved it so much that I made another batch today and decided to take some pictures and share them and the recipe with you.
