A Spring Feast: My Easter Cooking Plans
Sharing all the Easter meals I'm planning for this year, while I'm fasting... 😊
Hey everyone! So, I've decided to give fasting a go this week (the meal plan I sent you last week inspired me!). I'm keeping it simple and wholesome, sticking to just whole foods, no meat, dairy, or eggs for me—yep, going vegan for a bit, and following the Orthodox Lent guidelines. I’m even cutting out my usual treats like dark chocolate, coffee, and my much-loved lectin-free sourdough bread, because fasting is about abstaining from things you love too much. Now, you might be thinking, "Why give up on all these goodies, especially when they’re part of a healthy lifestyle?" Well, I’m really looking forward to four big mental and spiritual benefits:
Increased Mental Resilience: Fasting builds self-control and discipline, enhancing my ability to cope with stress and adversity.
Emotional Balance: It fosters a sense of accomplishment and satisfaction, leading to improved mood and emotional well-being.
Strengthened Willpower: Fasting exercises the brain's self-control "muscles," helping resist temptations and make healthier life decisions.
Enhanced Spiritual Connection: Fasting can deepen the sense of connection to a higher power and increase awareness, providing psychological comfort and a sense of purpose.
So far, so good! It’s amazing how once I made up my mind about fasting, there was absolutely nothing that tempted me—and I’m usually a gourmand and love my food! I’m even cooking the usual food for my husband and batch baking for Easter and beyond. This is a beautiful cleanse and restart and a reminder that we are stronger and more resourceful than we think.
I will break my fast on Saturday. But now, let me walk you through my plans for Easter.
My Easter Cooking Plans
As Easter approaches, and I’m still fasting, I find myself filled with excitement about the festive dishes I plan to create, though I'm still deciding on the exact schedule. Easter, for me, is a celebration of herbs and vibrant, bright flavors. Eggs will surely be on the menu, as will an obscene amount of herbs, lamb, Mediterranean spices like cumin, oregano, thyme, and coriander, lots of vegetables, and a little bit of seafood.Â
A recent discovery on Instagram led me to an intriguing recipe: eggs boiled, peeled, and then pickled in a concoction of vinegar, water, salt, sugar (I’ll probably skip), and freshly grated beetroot. After a day, they emerge with a stunning purple hue, which perfectly contrasts with the yellow egg yolk. I'm excited to try this out and will certainly share my experience.
