Welcome to CIMK Meal Plan #7! As we approach St. Patrick’s Day on March 17 and the official installment of spring, we're diving into a world of green foods, cozy Irish meals, and a dash of fun. Whether you're into celebrating St. Patrick’s or just curious about adding a new twist to your meals, there's something here for everyone.
This week, it's all about celebrating green in every meal. (You know how much I love GREEN food from Meal Plan #5). We’re doing it again, and we will probably continue to explore adding greens to our meals for the next few weeks. Think of vibrant smoothies, green pancakes, tasty tortillas, soups, and herb concoctions.
And, of course, what’s a nod to Ireland without trying out some traditional treats? From homemade Irish soda bread with its unique, cakey texture to delicious scones, and apple cake. Plus, for those colder days, we’ve got comfort foods like Irish stews along with a healthier take on mashed potatoes using parsnip and cauliflower.
Feeling creative? You can have some fun making shamrock-shaped tortillas. To make these tortillas, I drew a shamrock on paper and created a template to shape my tortillas. It’s that easy!
