Flourless Egg Muffins with Mushrooms, Leeks, and Herbs
These high-protein, keto muffins are the perfect savory way to start your day
After years of skipping breakfast, I've welcomed this essential meal back into my life. As a 44-year-old woman, I've found that a protein-rich, savory start to my day benefits me more than skipping it altogether. This shift accompanies my routine of dining early at 6 PM and wrapping up all eating for the day by 6:30 PM. Here’s a glimpse into my current morning routine:
Upon waking, I immediately open my window to breathe in some fresh air and soak in the morning light for a few moments. I wash my face with cold water, sometimes engage in oil pulling for about 10 minutes, then proceed to tongue scraping and brushing.
Next, I prepare a warm cup of water infused with lemon and a pinch of dry ginger. I enjoy this invigorating beverage outdoors while I engage in my morning movement routine. This includes lymphatic exercises, stretching, and other movements to activate my body and energy. This part of my day, bathed in morning sunlight (cloudy days included), listening to bird songs, and breathing in fresh air, is undoubtedly my favorite.
After returning indoors, I continue sipping my warm water while checking my sleep data on the Oura ring app, and quickly glance through my emails and social media. By then, my husband usually starts feeling hungry, prompting us to prepare breakfast. Typically, our meal includes eggs, avocados, broccoli microgreens, perhaps a slice of sourdough, and fresh, crunchy veggies like radishes or carrots.
Sometimes, I crave more veggies or a bit of variety but don't feel like engaging in extensive cooking early in the day. That's when these nutrient-packed, veggie, and herb-loaded muffins prove invaluable. I can whip up a large batch in advance and freeze them, making them an easy option to reheat in the oven or even enjoy cold. They offer a convenient, nutritious breakfast option perfect for busy mornings.
I usually have my coffee after or during breakfast, never before. Sometimes, I have a treat with my coffee (this morning was Almond Biscotti).
