It’s finally cherry season here in Denmark! 🍒
Cherries are one of my absolute favorite fruits. I love them fresh, straight from the bowl (they are a great source of melatonin) — but for weeks now, I’ve been dreaming of a tarte aux cerises, a classic French cherry tart. A few days ago, I finally got my hands on some ripe and juicy local cherries… and you can probably guess what I baked first.

This French-style tart is everything I hoped for: elegant and chic, yet surprisingly easy to make. If you’ve been following me for a while, you know I always aim to choose the cleanest, most wholesome ingredients — even when it comes to dessert. My goal is always to turn treats into nourishing, feel-good food.

One ingredient that makes this type of sugar-free dessert possible? Allulose. I just received a fresh batch last week — and if you’ve never tried baking with allulose, I think you’ll love it. Though not yet available in stores here in the European Union, I regularly order it from iHerb, a global marketplace that stocks high-quality American brands and ships internationally.

Allulose is a rare sugar found naturally in some of the healthiest fruits on earth — including figs and dates.

It looks a bit like powdered sugar and has about 70% of its sweetness, but with virtually no calories, no aftertaste, and a clean, natural flavor. What makes it truly special is that it may also support metabolic health.

A meta-analysis of eight clinical studies found that consuming just 5–10g of allulose with a meal can significantly reduce post-meal blood sugar and insulin spikes — a benefit you won’t find with most sweeteners.

Dr. Gundry is a fan as well. He sells his own allulose through GundryMD (this is my affiliate link with a discount) and calls it “a delicious, gut-friendly sugar substitute that won’t wreck your diet.”

If you can’t get your hands on it, feel free to use any powdered sugar replacement you prefer — but if you ask me, allulose is the one to try.

My Sugar-Free and Gluten-Free Cherry Tart

This elegant dessert borrows from two beloved French traditions — the rustic, fruit-studded clafoutis and the silky, bakery-style custard tarts you’ll spot in every pâtisserie window. Juicy cherries are nestled into a tender almond-millet crust and baked in a creamy vanilla-almond custard. The result is exquisite, yet delightfully simple — a perfect celebration of cherry season with a lighter, gluten-free twist.

In the words of my Danish husband: “This cake is very good! Is there more?”

RECIPE: French-Inspired Cherry Tart 🍒

Tart Pan: For these quantities, use an 8-inch tart pan with a removable bottom.

  • Makes: 6 servings (or 8 smaller ones)

  • Preparation time: 40 minutes

  • Cooking time: 50 minutes

  • Estimated Nutrition (per serving, based on 6 servings):
    276 calories, 19 g fat, 5.6 g protein, 29.4 g total carbohydrates, 2.8 g fiber, 7.5 g allulose — approximately 19 g net carbs.

A dairy-free option: If organic whipping cream is not an option for you, you can use a canned, full-fat coconut cream. I used coconut cream before in my clafoutis recipe. It works, but expect a bit of a coconut flavor to come through.
